Asian Meatball Salad
Ingredients
Meatballs
- beef/porc mix | 500g
- garlic | 1 clove
- green onion | 1 small
- ginger | 1 small piece
- soy sauce | 2 Tsp
Salad
- rice | 200g
- cucumber | 1
- carrot | 1
- sesame seeds | 2 Tsp
- red onion | 1
- coriander | a bunch
- mint | a bunch
- basil | a bunch
Dressing
- soy sauce | 2 Tsp
- lime juice | 2 Tsp
- sesame oil | 1 tsp
- ginger | 1 small piece
Steps
Place the meat in a bowl. Then proceed to grate the garlic and the ginger.
Finely chop the green onion (white and green) and add it too. Finally add the soy sauce and mix everything together.
Cook the rice.
Slice the cucumber and the carrot into thin strips. Finely chop the red onion and the herbs.
Toast the sesame seeds in a pan.
Cook the meatballs in a pan with a bit of neutral oil.
Mix together the soy sauce, lime juice and sesame oil to make the dressing.
Add some finely chopped ginger and/or chili as well.
Plate everything. Rice at the bottom and then the vegetables and herbs. Finally add the meatballs on top and drizzle with the dressing.
Notes
- pickling the red onion works great. Might be nice to try pickling the cucumber and carrot as well.
- you can add some chopped peanuts on top for some crunch.
- any onion can be used for the meatballs.
