Asian Sauces
Teriyaki sauce
Ingredients
- soy sauce | 250ml
- sake | 200ml
- mirin | 200ml
- sugar | 60g
Steps
In a pot, put the sugar, the sake, the mirin and the soy sauce.
Place it under medium heat and stir for a few minutes until the sugar dissolves
but make sure to not boil it.
Place it in a jar/bottle.
Notes
- if no sake, use water and white wine.
- add some minced ginger and garlic for some extra taste.
- sugar is 60g minimun, you might want to use more.
Peanut sauce
Ingredients
- peanut butter | 80g
- garlic | 2 cloves
- honey | 2 table spoons
- soy sauce | 2 table spoons
- rice vinegar | 2 table spoons
- toasted sesame oil | 1 table spoon
- water | 2 to 3 table spoons
Steps
Mince the garlic finely.
In a bowl, whish together the peanut butter, rice vinegar, soy sauce, honey, sesame oil and garlic.
Then add some water until getting a creamy but dipable sauce.
Sweat and Sour sauce
Ingredients
- white sugar | 32g
- garlic | 1 clove
- ginger | same as garlic
- red chili flakes | 1 table spoon
- white rice vinegar | 2 table spoons
- water | 32g
- tomato ketchup | 2 tea spoons
- cornstarch | 1 table spoon
Steps
In a pot, stir in all the ingredient except the cornstarch.
Mix up and cook at high fire until it starts boiling.
Prepare the cornstarch by adding to it a table spoon of water and mixing it until there is no more lumps.
Add the cornstarch mix to the pot and cook it until it thicken up (2 to 5 minutes).
Nu oc cham (Vietnamese Dipping Sauce)
Ingredients
- water | 6 Tsp
- sugar | 2 1/2 Tsp
- fish sauce | 2 Tsp
- lime juice | 1 1/2 Tsp
- garlic | 1 clove
- chili | 1
Steps
Slice the garlic and chili very thin.
Mix all ingredients together until the sugar has fully dissolved.
Simple dumpling sauce
Ingredients

rice vinegar | 1 Tsp

sesame oil | 1 tsp

red chili flakes | 1/2 tsp
optional Add-Ins

chili oil | 1 Tsp

green onions | 1 Tsp

garlic | 1 clove

ginger | 1/2 tsp

sugar | 1/2 tsp
Whisk all together in a bowl.
Steps
Slice the garlic and chili very thin.
Mix all ingredients together until the sugar has fully dissolved.
Asian Vinaigrette
Ingredients
- mirin | 10cl
- sesame oil | 10cl
- rice vinegar | 10cl
- soy sauce | 20cl
- sesame seeds | 2 spoons
Steps
Mix together all the liquids.
Heat up the sesame seeds in a pan.
Add them to the mix.
