Steps
To make a solid caramel, use a pan with a thick bottom and put the sugar in it. Let it melt at low fire. When the caramel is ready use it immediately as it will harden very quickly.
To make a liquid caramel, add 4cl of water the sugar and let it melt without mixing with a spoon, just gently move the pan. When all the sugar is melted, take out of the fire and add an extra 8cl of water. Be careful it can splash. Put it back on the fire and whisk it. Once ready you can use it or store it in a pot. It will stay liquid.
Notes
- always use a wooden spoon when making caramel.
- to is important to avoid having sugar on the side of the pan as it will crystallize the caramel when falling inside.
- better to have a caramel undercooked than overcooked. Consider that will it keep cooking a little bit after taking it off the fire.
