Carrot cake
Ingredients
- flour | 150g
- brown sugar | 200g
- oil | 150g
- carrot | 200g
- eggs | 2
- orange zest | 1
- macadamia nuts | 50g
- cinnamon | 1 tsp
- ginger | 1 knob
- salt | 1 pinch
- yeast | 1 pack
Steps
In a bowl mix the eggs and the sugar. Add the oil and mix.
Add the flour, the yeast, the cinnamon and the salt all together and mix.
Then throw it in the bowl with the eggs and sugar.
Add the macadamia nuts and grate the ginger in the bowl.
Then add the orange zest.
Finally, grate the carrot and add it to the dough.
Mix everything together.
Preheat the oven at 130.
Transfer the dough into a well oiled baking tin.
Cook for 1h.
Note
- might want to reduce the sugar.
- try it without cinnamon maybe?
- low temperature cooking to keep the moisture in the cake.
