Ceviche coconut
Ingredients
- fish | 400g
- citronella | 1 stick
- garlic | 1 tooth
- ginger | 100g
- coconut milk | 50cl
- red onion | 1
- lime | 4
- lemon | 1
- parsley | 1 bundle
- coriander | 1/2 bundle
- chilli powder | 1 tsp
Steps
Crush and cut the stick of citronella.
Slice half of the onion.
Peel and cut in pieces the ginger.
Do the same with the garlic.
Place into the mixer.
Add the juice of 4 limes.
Add all the parsley and coriander as well.
Pour the coconut milk.
Add some salt and mix everything.
Filter everything using a net and place in the fridge.
Cut the fish into small cubes and place into a bowl.
Add some olive oil. The juice of 2 limes. Some salt and pepper.
Mix everything and let the fish marinate a bit.
To serve it, pour the sauce over the fish. Add some fresh red onion and
some coriander on top. Sprinkle some chilli.
