Chicken adobo

Crush the ginger and the garlic and throw them in a bowl with the chicken.
Add the bay leaves and all the sauces. Let marinate for at least 30 minutes. 
Heat some oil in a pan. Put the chicken in and cook them few minutes. 
Meanwhile dice the onions. When the chicken is nicely caramelised, take it out of the pan and throw the onions in.
After few minutes, add the marinade to the pan. Add a cup of water and the sugar and some pepper.
Cook until the sauce is nice and thick.
Serve with rice and garnish with the spring onion.
