Chili con carne
Ingredients
- beef | 800g
- bell pepper | 1
- onions | 2
- garlic | 3 cloves
- tomato sauce | 400g
- tomato paste | 1 tsp
- beans | 1 can
- cumin | 1 tsp
- smoked paprika | 1 tsp
- cayenne pepper | 1 tsp
- sugar | 1 tsp
- red wine | 1 glass
Steps
Start by cooking the meat in a big pot.
Once ready, set apart.
Chop the onion and add to the pot.
Cut the pepper and the garlic and add to the pot.
Add the tomato paste, the cumin, the paprika, the chili powder, the sugar, salt and pepper.
Mix well and cook until fragrant for 2 minutes.
Deglaze with the glass of wine and finish cooking the veggies for 10 minutes.
Add the meat back into the pot and one tomato can.
Complete with some water or meat stock and cook for 60 minutes.
Add the beans for the last 20 minutes of cooking.
Notes
- for a veggie version, replace the meat with some carrots and celery ribs. Cook them with the rest of veggies in a sofrito style.
- or replace the meat with some lentils.
- or add some grilled cheackpeas at the end.
