Clafoutis
Ingredients
flan version
- cherrys | 450g
- milk | 500g
- flour | 200g
- eggs | 4
- sugar | 120g
- vanillia sugar | a pinch
cake version
- cherrys | 500g
- milk | 500ml
- flour | 50g
- almond flour | 30g
- eggs | 3
- caster sugar | 160g
- vanillia sugar | a pinch
Steps
flan version
Mix the eggs and the sugar together.
Add the vanillia sugar, a pinch of salt and half of the flour.
Mix all together.
Pour hald of the milk into the bowl and start mixing.
Add the rest of the milk, the rest of the flour and whish until everything is
well incorporated together.
The dough should be pretty liquid.
Place the cherrys with the bone in a cake dish and pour the dough over it.
Put in an already warm oven (200) for 40 minutes. Then sprinkle some sugar on top
and cook for another 10 minutes at 120.
cake version
In a bowl put the flour, the almond flour and the sugar. Mix together.
Add the eggs and mix until you get a smooth dough.
Add the milk and mix until everything is well incorporated together.
Place the cherrys with the bone in a cake dish and pour the dough over it.
Put in a preheated oven (180) for 1 hour.
Notes
- the dish shouldn’t be too big since the dough will not rise, round dish are great
- can do half almond flour half flour for some extra twist.
- when using gluten free flour, the dough might become heavy. Better to cut the flour with maizena maybe?
- can add some melted butter for extra richness
- also possible to use cream instead of milk or do half and half for a richer clafoutis.
