Dan dan noodles
Ingredients
- meat (pork, beef, chicken) | 200g
- noodle | 200g
- spring onions | 2
- sesame seeds | 1 tsp
- garlic | 4 cloves
- ginger | 1 finger
- tahini or peanut butter | 2 tsp
- dark soy sauce | 1 tsp
- soy sauce | 2 Tsp
- spicy oil | 3 tsp
- sugar | 1 tsp
- rice vinegar | 1 tsp
- sichuan pepper | 3 tsp
- fermented mustard green or kimchi | 1 Tsp
Steps
Start by toasting the pepper in a pan until fragant.
Then proceed to grind it.
In a bowl, put the tahini, the soy sauces, the spicy oil, some sugar, a pinch of the grinded pepper and the rice vinegar.
Mix it up and set aside.
Clean up the ginger and the garlic and grate them.
In a pan, heat up some neutral oil and start cooking the meat.
Then add the ginger, the garlic and the rest of the grinded pepper.
Cook for a bit while actively mixing.
Finally, add the fermented mustard green or kimchi.
In a pot, cook the noodles. Meanwhile, cut the spring onions and toast the sesame seeds.
In a bowl, add half of the sauce and some cooking water of the noodles.
Transfer the noodles to the bowl once cooked, add the meat and some spring onions.
Sparkle some toasted sesame seed.
