Ingredients
- butter | 180g
- egg | 6
- flour or maizena| 100g
- almond flour | 100g
- sugar | 220g
Steps
Cut the butter in pieces and throw into a pot. Cook at low fire until the butter becomes noisette.
Meanwhile, mix all the flours and sugar together. Separate the egg whites and add them to the mix.
Mix everything well together.
Add the beurre noisette too. Use a sieve when pourring the butter into the mix to leave the casein that separated from the butter out.
Preheat the oven at 160.
Pour the dough into small molds and cook for 25 minutes.
Notes
- add some vanilla to the flour mix for more flavour
- some of the flour can be replaced with pistachio flour
