Fish Couscous
Ingredients
- shrimps | 20
- white fish | some
- semolina | 100g / person
- carots | 2
- tomatoes | 2
- cucomber | 1
- roasted almonds
- parsley | a bunch
- basil | some leaves
- mint | some leaves
Steps
Dice the cucumber and tomatoes roughly.
Dice the carrots in small cubes.
Cook the fish and shrimps.
Prepare a bouillon with the shrimp heads.
Cook the semolina and let it cool down.
To make the pesto grind together the almonds, the herbs and some oil. Add some of the fish bouillon too.
Make enough pesto to mix it with the semolina.
Add the fish and vegetables to the semolina.
Sprinkle roasted almonds on top.
Notes
- use non roasted almonds for the pesto for a more milky taste.
