Flan
Ingredients
- milk | 1L
- cream | 90g
- eggs | 3
- vanilla pod | 1
- sugar | 110g
- maizena | 75g
- pate brisee | 1
Steps
Put the milk with the crean in a pot, add the vanilla pod to it and make it boil.
Cover and let infuse for 1 hour.
In the meantime, mix the eggs and the sugar until white and foamy. Add the maizena and mix again.
Gently pour a bit of the infused milk into the egg/sugar mix and whisk.
Then transfer everything back into the pot and cook at low fire while mixing
gently with a wooden spoon.
Remove the vanilla pod and pour the cream on the dough.
Cook in the oven at 180 for 45 minutes.
Notes
- add some lemon zest or cinamon to the milk while infusing to give it a different taste.
- the cream is ready when it is homogenous for the whole pot and starts to boil again. But it really depends on the stove and the pot.
