Steps

For gluten version, cut some bread in pieces put it in a bowl and sprinkle some 
water over it and use your hands to get the bread nice and damp.
Remove the stems from the tomatoes and put them into boiling water.
Remove the skin from the tomatoes and dice them.
Put them in a bowl.
Dice the cucumber and the pepper. Cut the onion. Toss evrything with the tomatoes.
Add the garlic and some salt, olive oil and the vinegar.
Start blending everything and pour some more olive oil until reaching the desired 
texture (smoothie like) and color (should turn from pale red to orange.
Chill it in the fridge for couple hours.
Serve it with diced of pieces of tomatoe/cucumber/pepper, a drizzle of olive oil 
and some grounded black pepper.
Can also add some boiled egg, canned fish or dry ham.
