Ice Cream and Sorbet
Lemon
- water | 250ml
- sugar | 250g
- lemon juice | 250ml
Steps
First make a syrup by cooking the water and sugar together. It is ready when
all the sugar is disovled in the water but before it becomes a caramel (should go
up to 105 degrees). Remove from the fire and throw the zest of a lemon in it.
Set it appart and let it cool.
Once cold, remove the zest add the lemon juice and mix.
Place it in the ice cream machine and make it go for 40 minutes.
Notes
- use bergamot instead of lemon or do a mix for a nice smoky flavor.
