Octopus
Ingredients
- octopus | 1
- red onion | 6
- carrot | 4
- leek | 2
- shallot | 2
- thyme | 1 branch
- bay leaf | 2
Steps
Rougly cut the onions and start cooking them in a tall pot.
Cut the shallots and add them to the pot.
Do the same with the carrots and the leeks.
Finally add the thyme and the bay leaves to the pot.
Cook for a few minutes.
Then add some water to the pot, enough to cover everything.
Add some salt as well and bring to a strong boil.
Clean properly the octopus so that no ink remain.
Then holding it by the head, proceed to immerge the tentacules in the boiling water and quickly pull them out.
Repeat the operation three to four time. Tentacules should twirl on themselves.
Finally, put the whole octopus in the pot. Reduce the fire to a very low boil and cook for 1 hour.
After 1 hour, turn off the fire and let everything cool.
Notes
- leave the octopus in the broth over night for more flavour.
