Pad Thai
Ingredients
- flat rice noodles | some
- eggs | 2
- shrimps or chicken | some
- fresh bean sprout | 100g
- roasted peanut | 20g
- lime | 2
- green onion | 3
- shallot | 1
- fish sauce | 3 Tsp
- tamarind paste | 2 Tsp
- brown sugar | 5 Tsp
Steps
Soak the noodles into cold water for 20 to 30 minutes.
Heat up a pot of water.
Prepare the sauce by putting the sugar, the tamarind paste, the fish sauce in a small pot and cook it until all the sugar has melt.
Crush the peanuts.
Slide the chives.
Dice the shallot.
If using chicken cut into small bites.
Heat up a pan or a wok. When very hot add a bit of oil and cook the shallot.
Then add the shrimps or chicken and let them color.
Cook the noodles for 1 or 2 minutes.
Move everything to one side of the pan and pour the eggs on the other side. Once the eggs are cooked, mix up everything together.
Add the sprouts and the noodles. Pour the sauce and toss everything.
Finally add the crushed peanuts and the chives.
Notes
- add 1 Tsp of soy sauce in the sauce
- add 1 Tsp of hot sauce in the sauce
- if no tamarind paste available, try to replace it with tomato concentrate
- noodles need to soak well before cooking them to avoid having them sticky
- might want to add tofu or replace the shrimp/chicken with more veggies
