Pakora
Ingredients
- veggies | 400g
- chickpea flour | 200g
- water | 200ml
- salt | 1 tsp
- amido di mais | 2 Tbsp
- bicarbonate | 1 tsp
- curry | 2 Tsp
- garam massala | 1 Tsp
Steps
Cut the veggies in small pieces.
Throw them in a bowl and add the salt.
Let it rest for 20 minutes.
Add the chickpea flour, the amido di mais, the bicarbonate, the curry and the garam massala to the veggies.
Slowly add the water and mix everything together.
Heat up some oil in a pan.
When the oil is hot, take a spoonful of the mix and throw it in the oil. Cook until golden brown (about 5 minutes).
Notes
- waiting for the veggies to rest with the salt will help them to release some water and make the mix more compact.
- you can use any veggies you like, but I suggest to use some potatoes, onions, zucchini and carrots, cabbage and cauliflower.
- you can add some chili powder if you like it spicy.
- serve with a yogurt sauce or some green chutney.
