Pate brisee gluten free
Ingredients
- flour | 200g
- olive oil | 6cl
- salt | pinch
- egg yolk | 1
- water (notcold) | 6 or 8 cl
for sugar version
- almond flour | 50g
- sugar | 5 Tsp
Steps
Mix the flour and the salt together.
Add the almond flour and the sugar if doing a sugar version.
Add the yolk in the middle and the olive oil.
Mix with your hand and slowly add the water until the dough is formed.
If the dough is still too crumbly add an extra egg yolk.
Form a ball, wrap it and put it to the fridge for 30 minutes to 1 hour.
Preheat the oven at 210.
If precooking it, put it in the oven for 10 minutes.
If cooking it empty, put it in the oven for 30 minutes.
Notes
- 200g works great for savory ones. Maybe try the same amount of flour for sugar ones?
- starting to mix with a fork works well.
- maybe to try with butter?
