Quick chicken Pho
Ingredients
- chicken | 1 small
- onion | 2
- carrots | 2
- garlic | 4 cloves
- chives | 2 sticks
- ginger | 1 piece
- shallot | 1
- star anis | 2
- black pepper | 2 Tbsp
- cinnamon sticks | 3
- brown sugar | 1 1/2 Tbsp
- fish sauce | 60ml
- red chili | 1
- lime | 1
- coriander | a bunch
Steps
Remove the onion and shallot skin.
Burn the ginger, onion and shallot on the stove.
Grate them with a spoon to clean them a bit.
In a pan toast the spices.
In a big pot, put the whole chicken and cover with cold water.
Port it to a boil then regulate the heat to keep the liquid at a simmer
After 30 minutes add the spices, the cloves, the charred veggies and the carrots.
Cook at as long as possible. The more it cooks the better.
Prepare the soup garnish.
Slice the red chili.
Mince the coriander, slice the onion and the chives.
Cook the noodles.
In a bowl, put the noodles, the garnish, some chicken and pour the broth on top.
Add some lime juice.
Notes
- add some kombu for a deeper flavor
- to make it veggetarians, replace the chicken with white and shitake mushrooms (12 of each), 6 carrots instead of 2, 1 nappa cabbage and 6 scalions. Just chop eveyrthing and put it all in the pot at the same time, cover with cold water and cook for 30 minutes after first boil.
