Pork fried rice
Ingredients
- day old rice | 200g
- minced pork | 200g
- brocoli | 100g
- onion | 1
- carotts | 3
- eggs | 3
- garlic | 2 cloves
- ginger | 1 finger
- oyster sauce | 1Tsp
- dark soy sauce | 1/2 Tsp
- light soy sauce | 1 Tsp
- white pepper | 1 tsp
Steps
In a bowl mix the eggs with a bit of salt.
Dice the carrots.
Cut the onion.
Cut the broccoli as small as the carrots.
Slice the scallions.
Thinely dice the garlic and the ginger.
In a bowl mix all the sauce ingredients.
Heat up the wok. When smoking hot, lower the heat add 2 Tsp of neutral oil.
Cook the eggs and put them appart.
When the wok is hot again, add some oil and add the pork.
Fry it for a bit in a pan then add the ginger and garlic.
Add the onion and cook for 2 minutes.
Add the broccoli and carrots together and cook them few minutes.
Finely add the rice and the eggs.
Fry on high heat for few minutes.
Lower the heat and add the seasoning.
Back to high heat and mix everything well together.
Notes
- better the use day old rice but can be made with fresh one too. Maybe use long grains rice as it is less sticky.
- add some chilly powder or fresh ones for a more spicy kick.
- when cooking with the wok, use the spatula to fold the rice from edges to center.
