Poulet basquaise
Ingredients
- chicken | some pieces
- tomatoes | 4 or 6 tomatoes
- red peppers | 1 or 2
- green peppers | 1 or 2
- onions | 2
- garlic | 1 big tooth
- bouquet garni | 1
Steps
Salt and pepper the chicken pieces generously. Cook the chicken just enough to
color it. Then set it apart.
In a big pan or a pot, heat up some oil and add the garlic but do not fry it.
Add the herbs and the onions that you sliced before. Let it cook for 2 minutes.
Add the red and green peppers.
To prepare the tomatoes, put them in boiling water just enough for their skin to
crack. Peel them and remove all their seeds. Dice them.
Add them in the pot, add some salt and pepper.
Place the pieces of chicken on top of everything, cover up and let everything
simmer at low fire for 45 minutes. Stir every now and then.
