Ratatouille
Ingredients
- courgettes | 2
- peppers | 2
- tomatoes | 4
- egg plant | 1
- onions | 2
- garlic | 1 tooth
- thyme | 1 branch
- lorel | 1 leaf
Steps
Mise en place
Dice or slice the egg plants and the courgettes. Put each in two different bowls.
Dice the onions. Put in a bowl.
Peel the peppers, then dice them and put them in a bowl too.
Remove the peduncle of the tomatoes. In order to peel them, boil some water and place the tomatoes in it for 1 minutes.
Then squash them with a knife or the hand and rouglhy cut them.
Cooking
In a dutch oven, heat up a good quantity of olive oil. Add the onion and cook unitl translucent.
Add the egg plants and cook them for five good minutes until their are soft.
Then add the peppers and the courgettes. Mix and cover. Let it cook for 10 minutes.
Finally add the tomatoes, the garlic and the herbs. Salt and pepper and mix.
Let it cook for a good hour at low fire.
Notes
- one option is also to cook everything in individual pans and mix everything in a pot for the last hour of cooking.
- if after one hour, there is still quite some liquid, let it cook a bit more uncovered.
- there is always the possibility to add a pinch of sugar to break the acidity of the tomatoes.
