Rice Chicken Soup
Ingredients
- chicken | whole chicken or some pieces
- ginger | 1 big piece
- rice | 2 glasses
- garlic | 3 cloves
- scallions | 4
- turmeric | 1 tsp
- stock | 1L
- fresh coriander | 1 bunch
- red chili | 1
Steps
Dice the scallions keeping the white part and the green part separated.
Peel the ginger and dice it. Same for the garlic.
In a big pot, heat up some oil and add the white part of the scallions, the ginger and the garlic.
Add the turmeric and let it cook for 2 minutes.
Add salt and pepper and cook over medium low until the scallions are soft.
Add the chicken pieces and let them color a bit over medium heat.
Add the rice and cover with stock. It should all be submerged.
Once it starts boiling, lower the heat and let it simmer.
When the chicken is cooked, take it out and shred it.
Add it back to the pot and add the green part of the scallions, the coriander and the chili sliced.
Notes
- add some bok choy or spinach at the end for some greens.
- add some soy sauce or fish sauce at the end for some extra umami.
- add some lime juice at the end for some freshness.
- take out the chicken skin and fry it in a pan for a crispy topping.
