Toum
Ingredients
- garlic | 100g
- oil | 30cl
- egg | 2
- lemon | 1
- salt | few pinches
- mustard | 1 spoon
Steps
First peel all the garlic and remove the green bean inside them.
Put them in a pot and cover with water. Put on the stove until it starts boiling and leave it 30s to 1m.
In a blender, put all the garlic, the mustard, the whites of the 2 eggs and some salt. Start blending until everything is smooth.
Then add the oil very slowly while blending. Once the emuslsion is done add the lemon juice and blend a bit more.
Notes
- one can also do the recipe without blanchir the garlic. It will be more strong in terms of garlic taste.
- divide everything by half to have less sauce.
