Scarpaiccia
Ingredients
- zucchini | 700g
- flour | 160g
- garlic | 1 clove
- parmigiano | 100g
- eggs | 2
Steps
Slice the zucchinis thinly.
Salt them and let them sit for 15 minutes.
In a bowl, mix together the flour, the eggs and the gratted garlic.
Add a bit of water if the mix is too thick.
Press the zucchinis to remove the water.
Add them to the mix and mix well.
On a dish add some oil and some parmigiano.
Add the mix on top and press it.
Add more parmigiano and olive oil on top.
Cook at 200°C for more or less 40 minutes.
It is ready when the top is golden.
