Shakshouka
Ingredients
- eggs | 4
- onions | 2
- tomatoes | 4
- olive oil
- cumin | 2 spoons
- tumeric | 1 spoons
- cayenne pepper | 1 spoon
- paprika | 1 spoon
Steps
Dice the onions. Heat up some oil in a pan and throw the onions in.
Cook the onions until soft.
Add the spices, salt and pepper and cook for another minute or two.
Add the tomatoes to the pan and cook for 20 minutes.
Add a bit of water if the sauce is thickening too fast.
With a spoon, create some holes in the sauce and break the eggs in them.
Add a splash of salt and cover the pan.
Let it cook until the eggs are ready.
Drizzle some olive oil and add some coriander on top.
Notes
- add some red pepers and/or mushrooms for a more rich dish. Cook them with the onions, right before
adding the spices.
- add some merguez or chorizo for a meaty version of it. If adding them, start by cooking them first.
- maybe add some garlic?
- adding a spoon of tomato concentre paste to boost flavor could be a good idea.
- could add some harissa to the mix too.
