Shrimp Curry
Ingredients
- shrimps | 500g
- lime | 1
- shallots | 2
- garlic cloves | 2
- curry paste | 3 Tsp
- coconut milk | 400 ml
- water | 200 ml
- fish sauce | 2 Tsp
- sugar | 1 tsp
- green beans | some
- peppers | 1
Steps
Slice the shallots.
Dice the garlic.
Clean the shrimps.
In a pot cook the onions in a neutral oil.
Add the garlic.
Add the curry paste and mix it up with the rest.
Now add a bit of the coconut milk and proceed to cook it until it splits. It should happen after 5 to 10 minutes but the more its cooks the more it will enhance the flavor.
Add the rest of the coconut milk and lower the fire. It should simmer, not boil.
Add the fish sauce and the sugar.
Cut the red peppers. Clean the beans and add them to the curry.
When the veggies are cooked add the prawn. They will be poached in about 5 minutes.
Finish with some lime juice and baby spinash.
Notes
- could swap the shrimps with some white fish.
- another option is to cook the shrimps first and then add them to the curry.
- beans and red pepper can be swapped with some chickpeas.
- great to serve with some noodles.
