Soupe au pistou

Dice the onion and cut the tomatoes into small pieces. Heat up some olive oil in 
a big pot and throw in the onion. Then add the tomatoes and cook for 5 minutes.
Dice the carrots, cut the potatoes into pieces and slice the zuchini. Clean the 
beans under cold water and add them to the pot. Add the carrots and cover with 
water. Add the laurel leaf and thyme and cook for 45 minutes.
Add the potatoes and the zuchini and some more water if needed and cook for another
20 minutes. 
To prepare the pistou, crush the garlic and basil leaves in a mortar and emulsify 
with some olive oil.
When the soup is ready. Place some pistou in at the bottom of a big plate. Pour the soup
over it and mix.
