Take the butter out in order to warm it up.
Prepare the spices by mixing them all together, 1 spoon of ginger, 1 spoon of nutmeg, 3
spoons of cinnamon.
Mix the sugar and the spices in a big bowl. 
Add the pieces of butter and the egg.
Mix everything together until it forms into a dough.
Add the flour litte by little and mix with a spatula.
Add the salt, the baking powder and mix.
Put in the fridge for at least 2 hours. (overnight is fine too)
Preheat the oven at 180.
Form 3 balls with the dough and spread it between two pieces of cooking paper until it is 3 or 4 mm.
Cut out the cookies and lay them on a baking tray. 
Cook for 10 minutes between 180 and 200.

Notes

Might be better to use real cassonade instead of cane sugar. Try to add coriander, pepper, anis to the spice mix.
