Taboulé
Ingredients
- couscous | 300g
- lemons | 4
- tomatoes | 3
- red onion | 1
- cucomber | 1
- hot water | 200/300ml
- fresh mint | a bunch
- dried raisins | 2Tbs
Steps
Put the couscous in a big bowl.
Press all the lemons and pour the juice on top of the couscous.
Dice the tomatoes and the cucomber. Pour the veggies juice resulting from the
cutting onto the couscous.
Cut the onion and chop the mint.
Pour the hot water onto the couscous to cook it, mixing with a fork and doing it
slowly to avoid having the couscous glueing together. Add salt and pepper.
Meanwhile, put the dried raisins in a bowl with water to rehydrate them.
Once the couscous is cooked, pour in all the ingredients and add some olive oil.
