Preheat the oven at 180.
Slice all the zuchini.
Place the cooking paper at the bottom of the pie plate and paint it with oil.
Spread some honey and sprinkle some thyme.
Layer the zuchini, pour some oil, add some salt and pepper, spread some honey and sprinkle thyme.
Repeat the operation three times and cover with the puff pastry.
Pierce the pastry in different places with a fork.
Cook for 45 minutes. 
Once ready, place the burrata in the middle and serve.
