Tatin Tomates

Preheat the oven at 180.
If using cherry tomatoes, cut them in half. If using big tomatoes, cut them in slices.
Place the cooking paper at the bottom of the pie plate and paint it with oil, balsamic vinegar and sprinkle some pine nuts. Sprinkle some salt and pepper. 
Place the tomatoes on top, if using cherry tomatoes, place them cut side down. If using regular tomatoes, layer them in a circle with slices overlapping.
Paint the dough with pesto and place it on top of the tomatoes. 
Fold the edges of the dough inside the pie plate, covering the tomatoes.
Cook for 45 minutes. 
Once ready, place the burrata in the middle and serve.
