Vegetarian tacos
Ingredients
- onions | 2
- carrots | 2
- sweet potatoes | 3
- chili pepper | 1
- coconut milk | 100ml
- ginger | a bit
- garlic | a bit
- water
Steps
Cut the carotts and the sweat potato in long thin stripes.
Slice the onion and chop the ginger and garlic finely.
In a pot heat up some olive oil and add the onion.
Let the onions sweat a bit then add the ginger and garlic.
Chop the chili peper and add it to the pot.
After 1 or 2 minutes, add the carotts and sweat potatoes.
Let it cook for 5 minutes.
Add cocunut milk to the pot. We don't want to make a soup so it needs only to
be creamy not too liquid.
Cover it and let it cook until the veggies are tender. Do not cook it too long
otherwise the sweat potatoes might become too creamy.
