Brodo di capone
Ingredients
- shrimp heads | a bunch
- yellow onion | 1
- carot | 2
- tomatoes | 1
- celery branch | 2
- apple | 1
- laurel leaf | 1
- chiodi garofano | 6
Steps
Cut the capone in half.
Half the carrots and the celery branches.
Leave the skin on the onion and cut it in 2 and insert the cloves in it.
In a pan roast the onion for few minutes to color it.
Clean and slice the apple.
In a large pot put the capone halves and cover it with water (6L).
Add the roasted onion, carrot, celery, tomatoes, apple, laurel leaf and 30g of salt.
Cook at low fire for at least 4 hours. It needs to simmer very very gently.
