Fish Bouillon
Ingredients
- shrimp heads | a bunch
- onion | 1
- carot | 1
- tomatoes | 2
- celery branch | 1
- white wine | 1 glass
- herbs | some
- spices | some
Steps
Roughly dice the carrot, onion and celery.
Heat some oil in a large pan and start roasting the shrimp heads.
After 2 minutes add the vegetables and let it darken for few minutes.
Turn the fire up and deglaze with the white wine. Keep it cooking at high fire to make the alcool evaporate.
After few minutes, add the diced tomatoes to the pan.
Cover and let it cook for a bit.
Finally add enough water to cover everything. Throw in some herbs and pepper grains and let it reduce slowly.
Notes
- add some butter when roasting the shrimp heads.
- play with different spices and herbs depending on what the bouillon will be used for.
- add some fennel to the mix.
